    Well, what a coincidence! We Sichuanese are talented in cooking pork, which has been a renowned fact (Shhhh, not modestly to say, we are talented in cooking everything), and pork here in Sichuan, is cooked in a special way which combined the spicy flavour and the crispy texture and finally make it taste like a spicy version of bacon. Start guessing the name of the dish?

    Let’s imagine, when you walk into a Chinese restaurant and you want to have pork, what will you think of at the first second?

    Bingo, that absolutely is Twice-cooked Pork!

    Twice-cooked Pork

    Twice-cooked pork is a homely dish in Sichuan cuisine, which means most Sichuanese are able to cook the dish. If you randomly choose 10 people on a street in Sichuan, 9 of them will say they can cook them, and the last 1 is the expert in tasting them.

    The name “Hui Guo Rou” was first seen in 1908 from an overview book about Chengdu city, ever since then, the name has been used till now. It was first originated in rural areas of Sichuan province, specifically, from Lianshan Town of Guanghan city. Each piece of the meat is as big as a hand.

    From traditional recipes in Sichuan, to cook Twice-cooked Pork, you have to use the meat from a pig’s hind legs and cut it into pieces. Then you boil the pieces, fry them after which you have to add the most important ingredient, Pixian Chilli Bean Paste, which is the soul of Sichuan cuisine and usually need to be fermented for more than two years before going into your kitchen.

    Skillful chefs in Sichuan also have a tip in cooking the dish – sugar. Sugar can subtly colour the meat and add unique flavour to the dish. Together with Pixian chilli bean paste, sweet bean paste, soy sauce, the sliced meat is finally wrapped by the ingredients, emitting a compound sense of fragrance: the fragrance of Sichuan families.
